A complex, full-bodied and serious wine with savoury notes of red pear and dark chocolate, enveloped in exquisitely integrated cedar oak, muscular yet polished and beautifully balanced. The vines have an average age of 30 years. Vinification takes place purely by gravity, without the use of pumps and a philosophy of minimal intervention is followed to respect the characteristics of the fruit and its provenance. Fermentation took place at carefully controlled temperatures with wild yeasts and several tastings took place per day to achieve the desired characteristics; culminating in 23 days’ maceration.The wines were then transferred to French (80%) and American (20%) oak barrels to mature for a minimum of 14 months, prior to the final blending.
