The third in a series of cheese and wine evenings in the air-conditioned comfort of after-hours Culinaris – we will explore 6 different aged cheeses lovingly matured in the old Lloyds bank vault that is the affinage room at Culinaris. As with wine, cheeses gain complexity with age. Bacterial enzymes influence taste and texture, releasing amino acids, lipids and other compounds not present in young cheeses. Amino acids crystallise, giving that characteristic crunch to long-aged hard cheeses.

If we need to cancel this event, we will notify you in advance and issue a full refund. If you can no longer make a tasting, and email us at wine@amphoracambridge.com over 48 hours before the tasting, we will issue you a full refund, or you may transfer your booking to a future event or store credit. Within 48h of an event, we cannot provide a refund or booking transfer, but you are welcome to send a friend in your place.
