Made in a semi-sweet style by cooling the fermentation before dryness is reached, Kindzmarauli is an iconic traditional style enjoyed widely in Georgia. The wine is inky dark since Saperavi is a grape whose flesh, as well as skin, is red. Elegantly, rather than lusciously sweet, with cherries, blackberries and a touch of black pepper, this would be a great alternative to port or a dessert wine, with cheese or as a digestif. It can also pair nicely with spicy, or sweetened savoury foods, such as Thai curries, Korean Bulgogis, Moroccan tagines with prunes, and not excessively sweet desserts.
